Tongue of the Cat Absinthe Spoon

Absinthe was almost always prepared and consumed in a highly specific way, the so-called "absinthe ritual,” which gave rise to its popularity. That ritual consists of a sugar cube positioned on a perforated spoon placed on top of a glass, iced water dripped on the cube, slowly dissolving it and diluting the absinthe dose already in the glass. The secret lies with the many refinements that both enhance the pleasure of preparing the drink while subtly improving its taste.
